I love this recipe. It has so much goodness in it and you don't even notice that you're eating cauliflower. It's super simple to make and a great snack on its own or added to your own stirfry.
INGREDIENTS
• Teaspoon Coconut oil
• 2 Large eggs beaten
• Salt
• 3 Garlic cloves minced
• 1 Tablespoon of fresh ginger finely chopped
• 1 bag of cauliflower rice (fresh or frozen) you can also blitz up your own.
• 4 Tablespoons of Tamari (gluten free soy sauce)
• 1 Teaspoon of sugar
• 1 cup or frozen peas, corn and carrot
• 1 Teaspoon of rice vinegar
• 1 teaspoon of sesame oil
• 3 rashes of bacon
• 1/4 peanuts of cashews chopped
METHOD
• Melt some of the coconut oil and scamble the eggs until they're cooked and remove from the pan
• Cook the 3 rashes of bacon under the grill or alternatively in the frying pan. Chop into bite size pieces
• Add coconut oil and cook the garlic and ginger until soft
• Add the cauliflower rice, the tamari, sugar and salt. Stir for about 3 minutes
• Add the frozen peas, corn and carrot until the cauliflower rice is crisp and the vegetables are warmed through.
• Stir in the rice wine vinegar sesame oil, nuts, eggs and chopped up bacon bits.
• Mix thoroughly and enjoy
