30. Healthy Snicker bites

Now beware, you may become addicted! I love these little treats and have to be careful not to eat too many in one day. These are great to have before a workout for a hit of energy or just nice to have as a little treat with your cuppa. The dates act like the caramel you would find in a real snickers bar. I also change up the recipe so that I can put them in Orlando's lunchbox. I add Biscoff spread in and remove the peanut butter and nuts to make it lunchbox friendly. Make sure to give them a go and let me know what you think!


INGREDIENTS


  • A Packet of 12-15 Medjool dates

  • A block of dark chocolate

  • Healthy peanut butter

  • Packet of peanuts or any nuts you have handy

  • 1 tablespoon of coconut oil

  • Sea salt


METHOD


  • Split each date open just on one side and remove the seed

  • Spoon an amount of peanut butter into the middle of each date

  • Add 2-3 peanuts on top of the peanut butter for each date

  • Then melt half a block of dark chocolate and the coconut oil together

  • Place each date into the melted chocolate and coat all over

  • Place on a tray with baking paper and add sea salt to the top of each chocolate covered date. You can add grated chocolate instead if you don't like the sea salt.

  • Place the tray into the fridge to set and then enjoy!!
